Chicken Tagine

Tagine is a traditional Moroccan dish, and is a staple for many Moroccans. The spices and vegetables used in a tagine vary from what is in season to where in the country you are located. In Morocco, many people buy the spices already mixed for the type of tagine they desire. Tagine is eaten out of a communal dish and is eaten with bread.

Ingredients:

2 pounds chicken (with bone)

2 onions

3 carrots

5 potatoes

1 cup peas

2 cloves garlic

 

1 lemon

1 cup olive oil

1 cup water

spice mix: 3 Tbsp cumin, 2 Tbsp turmeric, 1 Tbsp paprika, salt & pepper

 

 

Preparation

Step 1: Finely chop one onion and the garlic. Cook the chicken in a tagine dish (a pot can be used in its place) at a low heat with the onion, garlic, 1/4 cup of olive oil, fresh lemon juice, and 2 Tbsps of the spice mix. Turn meat until sealed. May need to add more olive oil and water.


Step 2: Chop the potatoes and carrots into 1/4 inch thick slices. Chop the onions into large pieces. Add potatoes and onions on top of the chicken with a Tbsp of spice mix. Cook for 10 more minutes, covered, then add the carrots. Cover and cook until carrots and potatoes are soft. Add peas and cook for 5 more minutes.


Step 3: Let the tagine sit for 5-10 minutes to allow it to cool off. Serve in tagine dish with flat bread.
