Eggplant Salad

Morocco has many unique salads, like this Eggplant salad, which they eat along with their main course. It is typical to serve the salad in serveral little bowls which they place at different ends of the table. It is custom to eat the salad without a fork or spoon, but with a piece of bread to soak up the sauce and flavors.

Ingredients:

2 eggplant

1 small onion

1 tomato

2-4 olives

1/2 cup olive oil

 

1 lemon

3 cloves garlic

salt & pepper

1 tablespoon sugar

Preparation

Step 1: Slice the eggplant into 1/2 inch thick circles. Fry in 1/2 cup of olive oil until soft, then mash the eggplant.


Step 2: Finely chop the onion the garlic, and add to the pan along with salt & pepper to taste, sugar and freshly squeezed lemon juice. Fry until onions are cooked.


Step 3: Chill in the refridgerator for atleast 2 hours prior to serving. Garnish with a thin slice of tomato and olives.
